My grandmother used to cooke everything in a pressure cooker (not really, but a whole lot).

Does any of you peeps have any experience using one. I have a brand new one, but I have yet to try it out.

# 2 cups Dried black eyed peas, 12oz, soaked overnight, rinsed
# 1/2 pound Bacon, cut into 1/2" pieces
# 1 large Red onion, minced
# 30 milliliters Garlic, chopped
# 6 cups Chicken broth
# 1/4 cup Tomato paste
# 2 teaspoons Dried oregano
# 1 Bay leaf
# 1 teaspoon Coarse sea salt or granulated salt
# 1 teaspoon Crushed red pepper flakes
# 3 tablespoons Brown sugar
# 1/2 pound Turkey kielbasa, cut into 1" pieces
# 1/3 cup Green bell pepper, chopped
# 1/3 cup Parsley, chopped coarsely



In pressure cooker, saute bacon until crisp. Add onion and garlic and cook until onion is softened, about 3 mins. Add peas to bacon mixture and stir well. Add broth, tomato paste, oregano, bay leaf, salt, pepper flakes, and brown sugar. Stir until thoroughly mixed. Secure lid. Over high heat, develop steam to high pressure. Reduce heat to maintain pressure and cook 5 mins. Release pressure accdg. to manufacturer's directions . Remove lid.
Add kielbasa, bell pepper, and parsley to pea soup. Bring to a boil over high heat and cook, uncovered, 3 mins., stirring occasionally. Discard bay leaf.
Yield - 6 to 8 servings.

# 2 tsp finely minced garlic
# 1 tbsp soy sauce
# 2 tbsp brown sugar, packed
# 1/4 tsp ground allspice
# 1/4 tsp cayenne
# 1/2 tsp salt, or to taste
# 4 to 4 1/2 lbs picnic shoulder, rind removed (trimmed weight)
# 2 1/2 cups beer
# 2 bay leaves
# 6 cups tightly packed, sliced onion
# 2 tbsp cornstarch dissolved in 3 tbsp water


In a small bowl, make a paste by mashing together the garlic, soy sauce, sugar, allspice, cayenne, and salt. Rub into the picnic shoulder.

Pour the beer into the cooker and add the bay leaves. Set the rack in place. Place half the onions on the rack and set the pork on top. Spread the remaining onions over the pork.

Lock the lid in place and over high heat bring to high pressure. Adjust the heat to maintain high pressure and cook for 55 minutes. Let the pressure drop naturally or use a quick-release method. Remove the lid, tilting it away from you to allow any excess steam to escape.

Check the pork for doneness with a meat thermometer inserted into the center. It should register 170 degrees. If not, lock the lid back in place and return the pork to high pressure for a few more minutes. Remove pork to a platter and set aside in a warm place. Remove the rack. If there is more than 2 cups of sauce, boil vigorously over high heat to reduce. Whisk in just enough of the cornstarch solution to thicken the gravy while cooking at a low boil for 2 to 3 minutes. Remove the bay leaves, carve the pork, and pour over the gravy.
Serves 4 to 6.

Being that Mrs. Hobbit is from Brasil, we are most familar with the pressure cooker. It is a staple in the kitchens down there for cooking beans and rice quickly. We've made split pea soup too that was pretty good!

And you were doing soooo good. Then you had to slip up and throw in metric.
