Can't believe that nobody in the family knows how to make good wings... I'm looking for something very specific:

They have that kind of heat that makes you feel sorry for breathing in while bringing them to your mouth, resulting in a cough fit, without going blind. So I guess I'm looking for hot-sauce-heat rather than tons of pepper

Even though breathing is a problem, I'd like to be able to eat a dozen of them without having to stop after each piece to drink half a gallon of cool 'something'

Just like ribs, I like wings messy, with sauce dripping... Any leftover blue cheese dip should be red once the wings are eaten.

I've had the best wings ever in a scary shed-like looking bar/restaurant in southern MO. (The kind of place where you start wondering whether the donor chickens where simply stolen, traded for moonshine, or won in a poker game...) They were served in a wooden bowl, swimming in sauce...

Help me out here, please!

I use Uncle Dougie's World's Most Dangerous chicken wing marinade with some Louisian hot sauce added. http://www.drhot.net/undougchicst.html

That smell/bite you are talking about comes from a sauce with lots of vinegar in it. Kind of makes your throat close if you're dumb enough to breathe in as you get it close to your mouth.

If you want breaded/fried, can't help you much.

Anyway, typical wing preperation (cut off excess fat, wash, etc...)

Marinade in above concoction overnight. (4 or more hours at least)

Pick your favorite spicy Q sauce. Uncle Dougie's world's most dangerous bbq sauce (neither really are but...) is pretty good.

Place chicken pieces in 1 layer in oven. I usually use chicken breasts and cut them in strips just b/c it's easier to eat. Cook about 1/2 way, then cover in Q sauce. There is a lot of sugar in commercial BBQ sauces so you can't put it on too early otherwise it'll blacken.

you could also try a kind of Jerk (waiting for comments) sauce. A nice flavor, a touch of spice, yet not overbearing.

Well I definetely got plenty of wings to play with now... $0.50/lb was just too tempting
