So, we had a cookoff at work. I believe there were 15 entries. I came in 3rd. Voting was done by putting $1 in the bucket by the chili you liked best. (proceeds to Disabled American Veterans) Winner won by over $12 so we think there was some ballot stuffing. Since it's all for charity, we didn't complain.

However, this leads me to your home recipes. No "buy Stags, heat, serve" recipes please.

My 3rd place:

* 2 pounds ground beef
* 1 onion, chopped
* 2 (16 ounce) cans chili beans with juice
* 2 (15 ounce) cans tomato sauce
* 2 (10 ounce) cans diced tomatoes
* 1 (4 ounce) can diced red chiles (or 4-6 peppers of your choice)
* 2 tbsp cumin
* 2 tbsp cayenne pepper
* 2 tbsp onion powder
* 6 cloves garlic crushed
* 4-8 tbsp molasses (depending on consistency)
* 4 tbps hot hungarian paprika
* 2 tbsp fresh ground pepper
* 2 tbsp oil
* 10-15 baby carrots sliced 1/4 inch
(carrots are optional but add an interesting texture)

Put oil in large pan and put in onions and garlic. When the onions start to turn translucent, put in ground beef. Cook until meat is fully done. Drain off excess grease.

In large crock pot/slow cooker, dump in all ingredients and mix well. Cook on high (but below a boil) for LONG time. (usually takes 3-4 hours) When carrots are tender, it's time.


I also got 5th place:
* 1 yellow onion, chopped
* 2 (16 ounce) cans chili beans with juice (I used Bush's spicy chili beans with sauce)
* 2 (15 ounce) cans tomato sauce
* 2 (10 ounce) cans diced tomatoes
* 1 small bunch broccoli
* 1/2 head of cauliflower
* 15-20 baby carrots sliced 1/4 inch
* 10-12 oz of assorted mushrooms (or just your favorites, portabella work great)
* 2 tbsp cumin
* 2 tbsp cayenne pepper
* 2 tbsp onion powder
* 6 cloves garlic crushed
* 4-8 tbsp molasses (depending on consistency)
* 4 tbps hot hungarian paprika
* 2 tbsp fresh ground pepper
* 2 tbsp oil
* 1 tbsp oregano
* 1 tbsp white pepper

Pour all liquids into crockpot and turn on high.

Chop onion and crush garlic. In medium skillet, sautee onions and garlic until onions start to turn translucent.

Add onions and garlic to crockpot.

Rinse and chop all veggies down to 1/2 bite sized pieces so they fit on a spoon nicely. Use just the heads of the broccoli and cauliflower. The stems stay too tough.

Add all veggies to crockpot and begin stirring in dry seasonings making sure not to allow them to clump.

Add molasses as desired.

It wasn't even really chili. I'll get it but it had macaroni noodles and bbq sauce in it instead of beans and tomato sauce. :puke:

Actually didn't taste bad. Just not chili. More of a beef-a-roni.

Not sure how I missed this thread, as chili is MASH's cooking specialty. My recipe is actually very close the Senior Kaga-san, save for the molasses (:scared:) and carrots. The sweetness would be unbearable. I add a little tomato paste if I wanted it a little sweeter.

I also include Jalapenos (2, finally chopped if it's just for me.. halved, then removed if it's for the family). I also use traditional chili powder instead of Cayenne. Both are good, but I like the traditional flavor of the chili powder. If I'm feeling really crazy, I add a small can of finally chopped Ortega chilis. No heat, but a great flavor and tartness.

Since you are adding chopped onion, what does the onion powder bring to the party? Just curious.

My 3rd place recipe at a chili cook-off (woulda won but we ate it all before the final round...ahh beer)

2lbs lean hamburger
2lbs stewing beef
1 can of smoked chipolte peppers ( julienned cut...thin strips)
2 jalepanos (fine dice)
1/2 cup dried arbol peppers (remove stems. cover in water ,boil till tender...keep water)
2 large onoins (med diced)
2 carrots (med. dice)
1/4 stalk of celery (med. dice.....use the leaves from middle of stalk also)
4 large tomatoes (med. dice)
6 strips of bacon (julienned cut)
1/2 bulb of garlic ( lightly cover in oil and roast till golden brown...then chop)
2 green peppers (med. diced)
4 red peppers ( roasted till black..remove skin and seeds and chop)
chili powder
oregano
thyme
cumin
ground corriander



brown hamburger and remove from pan
at a high heat sear the stewing beef ( you want it coloured outside and rare in the middle)
place bacon and butter in pot and at a med. low heat cook till all fat from bacon is extracted
add vegetables and peppers and mix well

then add 3 teaspoons of chili powder
2 of oregano
2 thyme
3 cumin
3 corrainder
mix well

add the meat
cover with stock (canned beef stock)
let simmer for hours ( add stock when necessary...just enough to cover it.)

Since you are adding chopped onion, what does the onion powder bring to the party? Just curious.
Missed this one before.

It gives a little more "slow burn" affect w/o the added texture of a lot of onions. There are many times I cook it w/o any onions b/c couple family members hate onions on sight. However, they like the chili. It's a mental thing I guess.

1.im chunky and i like chili
2.once again im chunky therefore im lazy
3. i dont wanna burn the house down
4. slightly better than ramon(ONLY SLIGHTLY)
