Straight up mac and cheese.
I can add ham or steak or whatever later.

Ideas?

I think all mac & cheese recipes are fairly similar:
roux white sauce*
cheese*
cooked macaroni*
bake

It's always the asterisk that gets ya. It's what makes it yours.

Add a small blob of Dijon mustard and/or cayenne to the white sauce.

Don't stick with just cheddar; throw in some brick, feta, gouda, havarti (excellent), swiss, gorganzola or limburger (2 stinky faves of mine).

There are also zillions of pastas out there to use (my fave is large shells) like bowtie/farfalle, rotini, penne, ruote/wagon wheels, or radiatore/accordion.
