Asparagus Egg Casserole
9 eggs beaten
1 lb asparagus, steamed and chopped
2 c. grated pepper jack cheese
1 can cream soup (asparagus, celery)
2 cans milk (use soup can)
1 box (6 oz) small croutons
½ lb mushrooms, sliced and sautéed
Salt and pepper
Mix all. Pour into greased casserole dish.
Refrigerate overnight.
Bake 45-55 minutes @325◦ until center puffs and browns
