I got a good deal on some Ostrich. I've never used it. Although I have used Emu before. So my question is this. Has anybody tried this before ? If so how was it prepared ? What did you think of it ?

I love ostrich. mmmmhmmm

I've had it in both steaks and in ground meat form for burgers.

The steaks should be sliced really thin and browned on both sides to sear in the juices before you slowly roast the meat, otherwise ostrich will get really dry.

Burgers are good but need lots of seasoning. It can be bland and ostrich really isn't that "gamey" of a tasting bird.

Sounds interesting. I love trying foods I've never had before.

Is it a red meat, like Emu?

Well I did it "Ostrich Wellington"

Ostrich steaks seared then covered with mushroom duxelle (fine chopped shroom's & shallots saute'ed then cooked dry in red wine)
then place a few slices of Frois Gras and wrap it up in puff pastry and bake. Highlighted with a Merlot Sauce and served with potatoe cakes....

Most people (myself also) found it a little tuff. So I will get rid of the rest in Stir fry's

YUM!!

oh, yeah, btw, you need to POUND THE CRAP outta it. I forgot to mention that. That's the reason behind it being so thin, you cut it somewhat thin to begin with, then you POUND it until it crys "uncle" and then POUND some more. Don't take any lip from it either. It's just going to lie to try to confuse you. It's cryings are usually faked like a kid getting swatted with a branch by his daddy.
