We have a lot of tomatoes growing in our veggy garden and some peppers, so I was thinking, SALSA!
What is a good salsa recipe
(not too hot please)

2 cups chopped tomatoes(small)
1/4 cup chopped onion (red bermuda..better flavour & colour..small)
1 med. sized jalepeno pepper(small)
1/4 cup of reg. pepper(small)
3/4 of a bunch of fresh cilantro(fine)(and cleaned well before chopping)
2 sticks of celery(small)
4 - 5 cloves of garlic (chopped fine)
1 tablespoon of salt
1/2 tablespoon of pepper
3/4 tablespoon of cumin
1/8 tablespoon of cayenne
1/8 tablespoon of chili powder
1/8 tablespoon of oregano
juice of 3-5 limes (not lemons)

stir and refridgerate for at least 4 hrs. to allow flavours to meld..

this is a simple and basic Salsa but add other spices, fruit and vegetables that you like. Experiment with other stuff it's fun and you may find a combination that very pleasing and unique to you..

*mango's, pineapple etc. are a nice touch and different from most.. :)

On that note... I had pineapple salsa this past Saturday at a pig roast. Pretty good stuff. Now if I can just beat the recipe out of him...

well you could substitute half the tomatoes with pineapples(of your fav. salsa recipe) and go from there.. :nod: after about 3-4 tries you will have one that you prefer better.. :nod:

Our tomatoes are still budding... we usually grow an assortment of hot peppers too but didn't this year. Usually some jalepenos, banana, and red chilis for sauces and salsa and a habenero plant to turn into hot sauce.
