Not sure If I ever posted this one. All the talk of rootbeer in the Wall had me thinking. (and it hurts)
One 4-5 lb pork roast with a nice layer of fat
1/2 yellow onion finely chopped
5-6 cloves garlic crushed
Salt/pepper to taste (I don't use any)
BBQ sauce of your choice (Sweet Baby Rays Hot-n-Spicy)
1 tbsp dry yellow mustard
Enough rootbeer to cover most of the roast.
In large crock pot throw everything in.
Cook about 190 for forever. (until pork falls apart easily)
Pull out the pork and shred on plate. If you need anything more than a fork, you didn't cook it long enough.
Strain out the onions and garlic. Mix into the shredded pork along with your BBQ sauce.
Serve on your favorite sandwich buns.
If you want to make the pork a little juicier, spoon in some of the root beer with the Q sauce.
