So I was trying to cook up eggplant steaks. about 1/2 inch thick. then purged them for 40 minutes with salt and wrang them out.
I coated them in Sweet Baby Rays and broiled them for 3 minutes per side in the oven. They tasted kinda funny. should I have let them purge more? or cooken them longer?

by funny do you mean the taste kind of resembled carbonation? you know? kind of a "zing" reminiscent of a club soda with a little metal ionization kind of feeling?
you know what I mean?
Is this what you refer to?

hrmmm...
not so much no. it was maybe a bit bitter. I guess you _could_ describe that as metallic. I knowyou need to cook eggplant long enough or there is a chemical which is dangerous for you to eat. but 6 minutes should be long enough.

Well, it looks like you cooked it long enough I guess. I would have given it another hour on the salt though...and LOTS of salt..covered in it. looks like snow on top.
I'm not exactly sure why it tasted "funny" but eggplant's a bit tricky.
