It's interesting. Makes a nice sauce for chicken and rice.
Ingredients:
3 Plums chopped
1 yellow onion finely chopped
1/4 cup lime juice (fresh is best)
1/4-1/2 cup chopped cilantro
2-3 tablespoons of chili paste (Tabasco OK if you don't have chili paste)
1 finely chopped jalapeno (optional)
1/4 cup orange juice
2-4 tbsp of sugar (or to taste)
Procedure:
Mix all ingredients in a bowl. The smaller you chop up the plum and onion, the better. Cover with plastic wrap and let sit in the fridge. You can use it shortly after it's all mixed but it's best to let it all combine over night.
The sweet/tart initial taste will set up the fiery surprise of the chili paste that's coming. :)
Chop some chicken over white rice and spoon salsa over the top. Lots of color too.
