One I caught off of Food network (and then promptly changed to fit my own tastes)
Healthy Chicken Fingers
Ingredients
4 - 5 boneless, skinless chicken breasts
2 cups bread crumbs
2-3 tbsp cayenne pepper
1 tbsp ground black pepper
1 cup yogurt
Procedure:
Take chicken breasts, cut off all the fat and rinse under water and cut into "eatin" sized strips.
Dip strips into yogurt (be sure to throw this out when done) and roll in bread crumbs. Place on backing sheet that is sprayed with Pam or other similar product so that they do not overlap or touch.
Bake at 400 for approximately 15 minutes. Times/temps may vary with ovens and thickness of the strips.
Gives you a "near" fried taste with MUCH less fat. Bread crumbs should be low enogh carb value for Atkins as well. (I would think so anyway)
