Since 'Pup is incommunicado for a little...

Guys, easy meal to loosen her pa..., er... I mean, warm her heart. ;)
(provided she's not a vegeterian)

Filet Mignon wrapped in bacon

2 6-8 oz Filets
2 large strips of thick salted smoked bacon

Procedure (assuming non-frozen meat)
Preheat broiler
Wrap bacon around the edge of the filet until the two ends overlap. Hold in place with toothpick.
Place in broiler 2nd highest rack setting (on most ovens) for 4-5 minutes/side. 3 1/2 if you like it really rare.
(It's better on the grill but it's @#$@# cold outside right now and the bacon causes LOTS of flare ups)

Good merlot (Sterling 2001 Vintner's Collection Merlot, is nice)

Green Bean Almandine (Stealing from Pup)
Ingredients:

Fresh green beans, trim the stem end off only & washed

sliced almonds

2 tbsp butter


Procedure:
In boiling heavily salted water place bean for 2-3 mins. remove to ice water to stop cooking.
In a frying pan over med. heat melt 2 tbsp of butter and place sliced almonds and cook till they are just beginning to brown then place green beans and toss till they are hot add salt & pepper and serve with almonds and butter over the beans.



Starch, either baked potatoes with sour cream or wild rice. (make 'em small, you don't want to be too full ;) )

For desert,
chocolate dipped Strawberries (the simple way)
2 (1 ounce) squares semisweet or bittersweet chocolate, chopped up
1/2 tablespoon whipping cream
1/2 tsp almond extract
8-10 strawberries

Procedure
In a glass bowl put chocolate and whipping cream. Place in microwave for 30 seconds, stir, continue heating untill completely melted. DO NOT OVER COOK. (It isn't pretty)
Stir in almond extract and allow to cool a little.
Wash the strawberries well. Do not remove the stems Be sure to weed out any brown or overly soft ones. Not a pleasant surprise when they are covered.
Dip each strawberry, holding the stem, about 3/4 the way up the strawberry. Allow excess to drip off. Place on wax paper. Make sure they do not touch each other.

Place in fridge until ready to eat. You can do this early in the day or shortly before you're ready to eat them. It only takes 15-20 minutes for the chocolate to harden up nice. Put them in a nice bowl to serve.

Goes well with a sweet champagne (Not a fan so can't help you out here) or a nice Port wine (Six Grapes is one I like).
