View Full Version : Not quite with cactus et al but...

Didn't have cactus handy in the local mexican grocery store last week so I had to go with a slightly different recipe. More or less a plain bread stuffing much like your traditional Thanksgiving turkey stuffing. Bread cubes, little celery, herbs, spices AND BACON!! Well, wrapped in bacon anyway.


Must say it kicked arse!

cutting that roast open like that took almost as long as cooking it. Tying it up and keeping the bacon in place was no easy task either. I need more hands. :(

It was worth the rassling match with the rolled pork and bacon and string.

My arteries clogged on the spot. Nothing a little angioplasty can't fix though.


And MMmmmMMMmmMMM at the butcher cut bacon slices.


Did I mention I'm marrying my butcher? His wife might not like it but... They have a killer cajun brat they make.


Next stop is a good kitchen store. Need a tenderizing hammer to beat that thing into submission next time. :)

it is amazing, when you start cooking, how much stuff you realize you need and don't have. Liek I still don't have measuring spoons. I wing it for now.

Looks aewsome! I have been meaning to make that for a while. I still can;t find cactus though.
