For when....give me an hour or so and a complete recipe,procedure,sauce,vegetable suggestion and potatoe.... :D

Stuffed Porkchops Highlighted w/ Apple Mango Chutney

Porkchops (boneless or bone-in) at least 3/4 inch thick
Stuffing: for 6 porkchops
1/2 a small onoin chopped very fine( all ingrediants for stuffing as small as possible,easier to stuff)
2 cloves of garlic
Small amount (only 6 here) of carrots,celery,red pepper
4-5 slices of bread chopped
1/4 teaspoon of , thyme, oregano,powered chicken base, parsley
2 tablespoons of melted butter
1/2 an egg yolk
Mix all to-gether very well and let flavours absorb for an hour


With porkchop along the outside(fat side) with a boning knife no wider than 1/2 inch cut a pocket in the side. To do so insert knife about a inch and a half into the side of the chop and twist handle in your hand a few times and wiggle the end to create a deeper opening. If you have a piping bag place stuffing into it and place tip into pocket and fill.

Pre-heat oven to 400*
Heat a frying pan to med.
In a bowl pour in 6 oz. of oil salt&pepper 1 teaspoon of thyme,cumin,(cajun spice optional)
Coat the chops in the oil and place in frying pan.Cook till nicely brown coloured on both sides
Remove from frying pan and place in oven for approx. 20 min.(check as thickness and ovens differ)








Apple Mango Chutney

1 grannysmith apple
1 mango
1 large bermuda onion (red onion)
1 green pepper
4 cloves of garlic
1 med. sized jalepeno (small dice)
1 celery stick
6 roma tomatoes(Italian)
1/2 bunch of fresh cilantro
1/2 bunch of fresh parsley
1/2 thyme
1 1/2 tablespoons of pickling spice
1 1/2 tablespoons of powdered chicken stock(or 1 1/2 6 oz. can of chicken broth preferred)
6 oz. of raspberry vinegar
2 tablespoons of sugar
1 bay leaf

All vegetables & fruits are to be cut med. to large sized
Herbs washed and chopped fine(cept for thyme, this you tie with bay leaf and remove it after....use string)

Melt 3 tablespoons of butter in a large sauce pan over low-med. heat.
Add vegetables and lightly sweat
Add fruit and mix
Then add spices and cook for 2-3 mins. to release flavours
Now add Tomatoes and then raspberry vinegar and thyme bundle
Reduce at a low heat until vinegar is halfway reduced
Now add chicken stock and sugar and reduce over a med.-low heat until almost dry (add more sugar if it makes you pucker and cough)

Serve over the chops hot or cold , great on burgers and other relish substitutes.... :D






[b][u]Vegetable Suggestion

Green Bean Almondine

Fresh green beans, trim the stem end off only , wash.
In boiling heavily salted water place bean for 2-3 mins. remove to ice water to stop cooking.
In a frying pan over med. heat melt 2 tablespoons of butter and place sliced almonds and cook till they are just beginning to brown then place green beans and toss till they are hot add salt & pepper and serve with almonds and butter over the beans.
