I have been experimenting with making hot sauce lately. Not salsa, but hot sauce (think Tabasco). I have wanted to do this for awhile, and last weekend, I finally broke down and did it.
In a nutshell...
In a blender, place:
- 15 large jalapeƱos
- 15 Habeneros
- One medium onion
- 2 cups of water
Liquefy.
Then add about 4 tables p o o n s of salt (kosher, preferably) and blend again. Pour the mixture into a large saucepan over low heat. Add 2-3 teas p o o n s of cumin. Add about 1/2 cup of white vinegar. Simmer for 10 to 15 minutes. Should reduce by about 10%.
Sauce is very thin. S p o o n over enchiladas, tamales, chicken, quesadillas... I love putting a teas p o o n in a big bowl of soup to really kick it up a notch!
The results are really amazing! Obviously, this one is not for the faint of heart as it is pretty darned hot, but I also made one substituting Anaheim chilies for the Habeneros. That one was mild in comparison, but still had a nice kick.
Mostly I went for flavor, and this combo sure has it. Give it a try. The ingredients are very cheap (<$5), it is totally simple to make (20 minutes tops), and you get a real tasty sauce.
