Just tried a dish called Hot Chinese Hacked Cabbage.

Very good. Hot because it is spicy, though not that spicy at all, a mild but pleasant bite. The cabbage is cold. A very tasty appetizer.

sounds a lot like kimchii.

We [Bulgariyans and Greeks] eat a lot of raw cabbage, most of it spicy and cold and sometimes soaked in a sweet vinegar sauce.

speaking of vinigar. Japanese rice vinigar is reallyy good. it is sweeter then american vinigar. mmmm good
