Side reccomendations?

reccomendation for sides for the cactus stuffed pork dish?
I was thinking saffron rice and asparagus but I have never had chiozo sausage or cactus so I am not sure what flavors to go for.

I believe you mean Chorizo. It's a mexican sausage with a bit of a kick. (if done right)

Never had cactus but I assume it's a mildly sweet flavor.

Steamed asparagus should be good. Nice and crunchy b/c I don't think anything from the pork will have much of a solid texture.

Wild rice or a brown rice mix might do well and Saffron rice should be OK too.

Plus a nice bottle of Pinot Noir. :)
